Idea bouncing around in my head (m x f / tg)

I have this idea bouncing around in my head.  Setting is written as if in modern times, but can easily be adapted to sci-fi or fantasy genres as well! Pm me if interested! 

The general concept is this:

She (your character either F or TG) arrived in town a few years back. Sweet girl, but with a mysterious past since she is a supernatural being (be it fae, lycan, vampire, etc.) My character owns a small time local bookstore as well as he sings at the local bar from time to time to make some extra side cash.  One night they meet (the classic romance bs) at the bar while she's being harassed by a few drunks.  With her strength and abilities she is able to deal with them easily. But MC is the one that intervenes, and after such point a friendship grows.  A year of friendship turns into 2 years of dating. Next thing you know, he is on one knee proposing in the midst of people. 

This is where the story goes sideways.

In a shocked manner she says no and runs off.  Thinking he did something wrong he gives her space before returning to their apartment to talk to her later that evening.  Here he finds she has left, leaving the ring on top of a note that simply says "I'm sorry" devastation sets in and he has a rough year ahead of him.  The reason she left could be (more of her kind are hunting her, hunters are after her.  Or something dealing with an over arching plot) regardless when she came to his town she was a run away, and her plan wasn't to get to involved and to stay hidden.  But with his singing popularity rising and the proposal which people were filming, she had to "relocate"

3 years pass, he's going to meet some people about possibly signing a record label.  Upon arriving to said town he hits the local bar for food and drinks before his big day tomorrow. As he sits at the bar, realization hits him as she is the bar tender with a different look to her.

How do they react? What happens next? I'm thinking maybe whomever is after her could be using him indirectly to flush her out.  I have a few ideas but I'd like to get others opinions on the idea to better flesh the story out.
