This is not my sanest idea ever, but I just got sucked into an Amber game over on RPOL and dusted off my battered and dog-eared copy of the rules for the first time in, oh, about three years. Almost at once the hooded lantern above my furry noggin flickered to life...
The first idea is a VERY straightforward game, pretty much by the book, with the PCs all being the same age...children of a monarch with access to a Pattern, turned loose on their eighteenth birthday to explore and enjoy the benefits of Royal Blood. Oh, and to perform an errand for their beloved Mother. There's this guy in the dungeon and she'd like you to escort him home. Says his name's Corwin...
The second is a bit more complex: have a Throne War and use that as the backstory for a more 'normal' campaign! That is, the PCs from the throne war become the elders and parents of the junior Amberites for the next game.
(Haven't done a decent Throne War since, uhm...since the summer I got the book, back when it was first published.)
