Specifically of the Cajun variety (not the false-Cajun-actually-Creole style they sell at the mall). Chicken, sausage and pork, parbroiled rice, bell peppers of various color and cellery, a pinch of annise seed, two basil leaves, a table spoon of chilli powder and a drop of habañero pinched out of the actual fruit.
