Foods and diets

Because I wanted to start a thread, was hungry, and curious I wanted to know what everyone's eating habits were(everything, vegetarian, vegan,other?). For example, I could technically be classified as a Vegan for a very simple answer. Although the full answer  is a bit more complex than that. I have a metabolic disorder called Phenylketonuria (PKU) that has me avoid protein, so therefore since meats, nuts, Dairy, grains, etc... have significant amounts of protein i have to avoid them... my other diet is Diabetes type two but that has recently sprung up and hasn't really messed with what I already have...

how about you all?

Also you don't have to add your favorite food but it's encouraged. Mine::Avocado rolls

I am proud to be an omnivore. Yes, I eat meat and I am in no way ashamed to do so. But, and this is important, I don't think that meat is the centerpiece of every meal and must have a 2 pound steak every night. No, it is one piece of a much larger puzzle. I eat pretty much everything, although I am picky about most things. I don't particularly care for most seafood. I love bread. I have never met a fruit I didn't like, but I'm significantly pickier about vegetables.

And, above them all, the divine foodstuff, my favorite, forever and always - chocolate. The darker the better, up to around 85% currently. I'm working on raising that bar...

So, all in all, I consider myself pretty damn lucky to be as good a cook as I am. I can make whatever I want to eat. And if I discover something new that I like, I'll find out how to make it. I recently discovered a liking for Thai food, so I learned how to make my own Pad Thai.

I'm a pescatarian - I've been one for about nine months now. I cook mostly vegetarian, and when I go out I'll eat seafood if the vegetarian fare is rather grim (nonexistent or not worth the money I'm paying for it). I no longer eat land meat - chicken, beef, pork, sheep - for environmental as well as health reasons. I try my best to support local farmers and buy local produce, rather than stuff that's been shipped halfway across the country, which is why I love farmer's markets. :)

I love fruit - like grdell, I've yet to meet one I dislike - as well as most vegetables, including ones that I don't know the English names for. I also love seafood, which is the only reason I'm not a vegetarian.

The transition wasn't difficult, for me - I don't really miss meat, and it doesn't even tempt me when I see others eating it.

I don't really have one favorite food - I just like eating in general. My favored cuisines are Asian, though - Korean, Japanese, Chinese, and Thai.

My diet has actually changed over the course of the last five years.  I've gone from eating a lot of boxed and prepackaged dinners, canned foods, and microwaveables to fresh fruit, veg, proteins, and building my own meals from basics.  It has been a change that occurred mostly because my parents way of eating was (and likely still is) not as healthy or varied as I would have liked.  Instead of cooking a prepacked box of macaroni and cheese, I now cook the pasta, make the sauce, and combine to make a finished dish.  I really cannot even bear to consider buying convenience packaged meals or side dishes anymore. 

I enjoy almost all fruits, and I've come to call several vegetables delicious over the past five years which I would have never considered before.  Eggplant, squashes, mushrooms, brussel sprouts, green beans, artichokes, spinach, and asparagus are among the newest additions where as before potatoes, corn, rice, lettuce, onions, and tomatoes were the only things from the produce section I would even look at.  I am excited to try new things now.  I made a salsify and mushroom ragout in my class this past quarter, and I found it to be one of the most flavorful dishes I'd ever made.  Never had salsify before that night.

I love land proteins, especially chicken.  Lamb is a close second.  Fish doesn't inspire me much, but I love shrimp.  I would love to learn various ways to cook crab and lobster.  Univalves and bivalves turn me right off though I will welcome the chance for my mind to be changed.  I think I'll be making some clams casino in my American Regional class coming up.  I eat a decent amount of eggs.

I do enjoy sweet things though the only sweets I eat that I don't make myself are chocolates (dark if at all possible), ice cream (I'll be changing that soon enough as I'll be learning how to make my own), and anything I happen to have from the bakery while at work.  Other than that, I make most everything sweet I consume.

I drink coffee, water, tea, milk, and fruit juices (natural juice with no added sweetners).

I think that's pretty much my dietary habits.  On a side note, I've heard the term flexitarian used by my chef instructor.  She refers to herself as one, and she explains it as eating meat when she wants to.  She apparently does not eat it very often, but she does eat it.  I suppose it would make sense if you're teaching cooking that you should know how the things you're cooking taste.

Grdell:: By all means be proud of what you eat, however you eat and i have to give you kudos for knowing that meat is part of the meal and not the only part of it.

Caeli:: thank you for reminding me of the name of that diet...I needed to tell a few people i know they are pescatarian and not vegetarian but I couldn't remember the name so thanks

Ryven::wen from canned and pre-packaged to fresh huh? that sounds great.. I'm slightly envious, i wish i knew how to cook as well as it sounds you can....

The basics of cooking are really quite simple, and once you know them, it's not that hard to eat non-packaged foods.  For my mac n' cheese example, all it really takes to make that is noodles, cheese, flour, butter, and milk.  Salt and pepper for seasoning, and you've got basic mac n' cheese.  The hardest thing is knowing the order of putting the ingredients together.  Flour + butter, add milk.  Add cheese.  Season, mix with cooked noodles.  That's pretty much it.

Ahh but you see my PKU throws a wrench in that...because of all the ingredients you just mentioned the only thing I can have is the butter...And I can cook, just not the fancy stuff...I'm mostly self taught and what i can make i do well but i don't know all those basics of cooking you mentioned...I am working on that though(looking into classes in college)

Ryven - making ice cream is not that difficult, especially if you're able to make sauces and sweets already.  Your average ice cream recipe is basically a custard with assorted flavorings.

When you're working with a special diet, it pretty much throws a wrench into any kind of cooking.  The example was just to make a point, not to display the subject I used as a possibility you should try.

I have a considerable number of food allergies, so my diet is pretty restricted.  In addition to having celiac disease (genetic gluten allergy) I am also allergic to eggs, soy and casein and I have systemic candida.  I'm hypoglycemic, so I avoid all refined sugar and most natural sugars. I have IBD, and certain foods aggravate that (though the ulcerative colitis is much better these days, so I've been able to widen my food choices). I also have a tendency towards hyperacidity in my body, which leads to severe muscle cramping and Interstitial Cystitis, so I eat an alkaline producing diet.

Basically, I eat vegetables and seaweeds, but only the ones that I have tested to know my level of reaction to them.  When I was first diagnosed with all these issues, I had to test every food I put in my body by an elimination process.  Now I have a list of safe foods, occasional foods and never foods. For a long time, some of my favorite veggies would make the IC flare, but my food list has expanded, thankfully.  I eat very little meat (less than one 3 ounce serving per day) and when I do it's usually fish.  I also eat chicken and turkey on occasion, and even the rare bit of pork these days.  I hadn't eaten it or beef for almost 25 years, but when faced with a very limited diet, I began to include it again because I didn't react to it.  Still no beef, though.  I just don't like it.

In addition to veggies I have some nuts - like cashews, pumpkin seeds and hazelnuts that I tolerate - and thankfully garbanzos and sesame seeds work, cause I think I would die without hummus, lol.  I can do olive and canola oil.  I can also tolerate rice, buckwheat (which doesnt have gluten) and corn.  But all of these things are acid forming, so I limit my intake.  For fruit I really only eat dark berries and watermelon and from time to time, some lemon juice.  Fruit's a bit of a no no with the candida. Very, very rarely I'll have some super dark chocolate as a treat (think 85 + %), but it has to be soy and milk free.  You have NO idea how excited I was to discover that Earth Balance just came out with a non hydrogenated margarine that's olive oil based and soy free, lol.  I think I squealed in the store.

As far as beverages go, it's alkaline water and herb teas.  I use rice milk and hazelnut milk for cooking and for a very rare decaf espresso.  After seven years I can tolerate a bit of tequila and a small glass of wine from time to time for special occasions. 

And I bet no one wants to come eat at my house, lol. 

edit:  OH!  Also, my fave food is an unagi roll, but I can only have it in Japan, as all the eel in the states is premarinated with soy sauce and therefore filled with GLUTENY DEATH!!!  My local sushi bar makes a pressed roll with shiso leaves that I can eat and adore.  After that, I'd have to say it's hummus with onions and tomatoes.  Yumm.

I have allergies and dietary problems which mean eating any kind of fruit or vegetable leaves me in serious discomfort for hours.  I can stomach pasta, rice, and a limited amount of pulses, and onions for some reason don't cause me much problem, but one bite of banana makes me ill.  So I eat a lot of meat and carbs.  And I like it, which is good.  I can't tolerate processed sugars, so no chocolate (diabetic chocs are okay but laxative) or sweeties or cakes unless I bake my own, which I can and do.  I have had to cook from scratch for years because of mine and my kids' different problems, and I grow fruit for them because the supermarket stuff tends to make them wheeze.  We generally eat pretty well in spite of it all, and thank the gods I can drink coffee till it comes out of my ears with no trouble at all - caffeine is all that gets me through my day (can't drink alcohol much either, though I treat myself once a week to a glass of irish whiskey).  Favourite food?  Steak and onions.

Man and i always think i have it bad when i consider my PKU... Honestly though I have to thank you on the part of being a celiac the gluten free craze that has been sweeping the nation is mainly for you but it helps PKU people like myself as well.

Wow a reverse vegetarian diet because of reactions interesting  thanks for sharing...^-^ technically I could eat anything i wanted to but it would mess with me mentally to no end...so i follow my diets

I grew up in Greece, very much on the celebrated Mediterranean diet, with grains, vegetables and pulses as the staples, meat on perhaps 3-4 meals a week, and going vegan for about 1/3 of the year for religious reasons. Four years ago, I moved to the UK, and my diet changed a lot. I understand the need for more protein in the colder climate, but I'm still uncomfortable with meat in almost every meal. I'd cook more Greek, but it's surprisingly hard to find decent vegetables for most of the dishes I like - some of them I can't find at all!

I have a fierce sweet tooth, with milk chocolate topping my list of indulgences, but from time to time I get salt cravings, and then only nuts will do, preferably pistachios.

I think that we can thank a few celiac celebrities for finally bringing the condition to light with the new craze of gluten free diets.  Trouble is, the U.S. (unlike the UK) has no established standard for what constitutes the designation "gluten free."  For instance, I had a 200+ day migraine because my 'gluten free' rice milk turned out to have barley enzyzmes in it.  Because it was under 1 part per million, they called it gluten free. Other products are not made in dedicated facilities.  Some celiacs are not as sensitive as I am, but I wish I could trust every gluten free product to really be gluten free.

I pretty much eat what I want.  Everything I enjoy is fattening, too sweet, has too much of this or too little of that.  Screw it.  I'm not going to live my life like a monk.  I think these days, the only healthy diet is the Nothing Diet.  Nothing doesn't cause obesity, diabetes, strokes, cancer, liver disease, radiation sickness, hives, gout, heartburn, or heart disease.  For optimum health, eat rice cakes topped with sawdust and sprinkled with drywall.

Not my fault human taste buds were designed to enjoy everything not good for the body.  MAJOR design flaw.  Definitely needs to go on the bug list to be fixed for the design of Human Body 2.0.

The only meat i eat is seafood so a pescetarian. I don't eat what I can't kill is basically my rule of thumb. I used to live in Florida so I have been fishing and shrimp fishing and never really had a problem with doing that. I've always been a lover of animals though, so I can't ever picture myself killing a cow or a chicken and definitely not a pig because I think they are pretty intelligent creatures; unless it was like the end of the world and was a life or death situation then I could definitely do it.

My favorite meal would have to be Mahi Mahi with sazon adobo and a slice of Dill Havarti with a side of my home made mashed potatoes.
